Rich beef and citrus casserole

Grapefruit segments cut through the richness of this casserole.

What you need

675 g beef braising steak, trimmed and cut into cubes
25 g plain flour
seasoning
6 tsp-45 ml vegetable oil
1 large onion, peeled and sliced
1 clove garlic, peeled and crushed
3 tsp plain flour
150 ml pink grapefruit juice
300 ml red wine
300 ml beef stock
1 turnip, peeled and cubed
2 carrots, peeled and sliced diagonally into chunks
1 pink grapefruit, peeled and segmented

Method

  1. Toss the cubed beef in a bowl with the flour and seasoning until lightly coated. Heat the oil in a large saucepan. Add the onion and garlic. Fry for 2 min or until softened.

  2. Add the meat to the pan. Fry for 5-8 min, stirring constantly, until well browned. Remove beef and onions from the pan. Set aside.

  3. Stir the remaining flour into the pan. Cook for 1 min. Gradually pour the grapefruit juice, red wine and beef stock into the pan, stirring constantly.

  4. Bring to the boil then add the beef and onions to the pan. Reduce heat and simmer for 40 min, stirring occasionally.

  5. Add the turnip and carrots. Cover and cook for 50 min, stirring frequently.

  6. Stir in the grapefruit segments. Season to taste. Cover and continue to cook for 10 min or until vegetables are tender.
