White soda bread
Traditional bread of Ireland, originally baked in a fireplace hearth oven, or even on a griddle.
What you need
- 450 g plain flour
- 1/2-1 tsp salt, to taste
- 1/2 tsp bicarbonate of soda
- 1/2 tsp cream of tartar
- 300 ml milk
Method
Preheat oven to 220°C.
Sift the dry ingredients together. Gradually add the milk to give a soft, but not over-sticky, dough.
Turn the dough out onto a lightly floured board. Shape into one large or two smaller rounds about 2 1/2 - 3 1/2 cm thick. Lightly mark the loaf or loaves into segments. These are know as 'farls'.
Bake one large loaf in the oven for 35 min or smaller loaves for 20-25 min, or until well browned and risen. Transfer to a wire cooling rack. Cover with a clean cloth to keep the bread really soft and fresh.
