Sweet and sour pork

Marinated battered pork pieces deep friwend and served in a mildly sharp and refreshingly sweet syrupy sauce, best served with steamed rice.

What you need

450 g diced pork
3 tsp dry sherry
3 tsp light soy sauce
1/2 tsp salt
1 egg, beaten
45 ml cornflour
oil for deep frying
for the sauce
150 ml chicken stock
3 tsp light soy sauce
4 1/2 tsp white wine vinegar
3 tsp soft light brown sugar
3 tsp tomato puree
1/2 green pepper, cored, de-seeded and diced
1 carrot, peeled, cutinto thin strips and blanched
2-3 salad onions, trimmed and chopped diagonally
25 g canned waterchestnuts, sliced
1 tsp cornflour

Method

  1. Put the pork in a bowl. Stir in the sherry, soy sauce and salt. Leave to marinate for 20 min.

  2. Mix together the egg and cornflour to form a smooth batter. Drain the marinated pork. Add to the batter. Gently stir to coat.

  3. Remove pork from the batter with a slotted spoon. Deep fry in batches until golden. Drain on kitchen paper.

  4. For the sauce: Mix together the chicken stock, soy sauce, vinegar, sugar and tomato puree in a saucepan. Bring to the boil. Add the vegetables and waterchestnuts. Stir well.

  5. Mix the cornflour with 1 teaspoon of water. Stir into the sauce. Bring back to the boil, stirring until thickened. Serve.
