Chicken and cashew nuts

A delicious stir-fried Chinese dish with the contrasting textures of succulent pieces of chicken and sweet crunchy cashew nuts. Originally this dish would have been made with peanuts.

What you need

40 ml cornflour
40 ml vegetable oil
225 g skinless chicken breast fillets, cujbed
2 carrots, peeled, sliced and blanched
50 g shelled unsalted cashew nuts
50 g canned bamboo shoots, halved
25 g frozen petits pois, thawed
for the sauce
3 tsp soy sauce
3 tsp dry sherry
1 1/2 tsp cornflour
1 pinch salt
60 ml water

Method

  1. In a small bowl, mix together the cornflour with 10 ml oil and 30ml water. Add the chicken. Mix well. Set aside for 10 min.

  2. Heat a wok or large frying pan until hot. Add the remaining oil. Stir fry the chicken for 3-4 min until cooked through and golden.

  3. Add the carrot, cashew nuts, bamboo shoots and peas. Stir fry for 1 min.

  4. Mix the sauce ingredients together. Add to the pan. Cook until the sauce has thickened. Serve.
