Beef in oyster sauce

This popular Cantonese dish can be made with any beef steak cut.

What you need

1 tsp sugar
3 tsp soy sauce
3 tsp dry sherry
2 tsp cornflour
350 g rump steaks, cut into thin strips
60 ml groundnut oil
50 g canned bamboo shoots, sliced lengthways
100 g baby sweetcorn, trimmed
100 g mange-tout, trimmed
3 salad onions, trimmed and chopped
3 tsp root ginger, sliced
6 tsp-45 ml oyster sauce

Method

  1. Mix together the sugar, soy sauce, sherry and cornflour. Add the beef and stir to coat. Leave to marinate for 30 min.

  2. Heat the oil in a wok or large frying pan until smoking. Stir fry the beef for 30 sec or so until brown. Quickly remove with a slotted spoon. Set aside.

  3. Add the vegetables to the pan. Stir fry for 2-3 min.

  4. Return the beef to the pan with the oyster sauce. Stir fry for 1 min. Serve.
