Sesame prawn toasts

A Chinese dim sum recipe: small toasts topped with a tasty prawn paste and a coating of sesame seeds.

What you need

350 g peeled cooked prawns
1 egg
2 salad onions, trimmed and finely chopped
2 tsp finely chopped root ginger
3 tsp light soy sauce
1 tsp sesame oil
8 slices (thin sliced) white bread, crusts removed
50 g sesame seeds to coat
vegetable oil for frying

Method

  1. Place prawns, salt, egg, salad onions, ginger, soy sauce and sesame oil in a food processor or blender. Process to a paste.

  2. Thickly spread the prawn puree evenly over the bread slices.

  3. Spread the sesame seeds on a plate. In turn, press the spread sides of the bread onto them, to give an even coating.

  4. Heat a frying pan or wok filled with 2 1/2 cm oil. Fry the toasts, sesame side down for about 1 min or until crisp and golden.

  5. Turn over and fry the other side until golden. Drain on kitchen paper.

  6. Cut each slice into even strips or triangles. Serve.
