Mini chicken satay

These mini satay sticks can be made in advance then cooked up on the day.

What you need

6 tsp groundnut oil
1 small onion, peeled adn finely diced
2 cloves garlic, peeled and finely diced
450 g skinless, boneless chicken breasts, cut into 2 cm cubes.
for the marinade
150 g creamed coconut
300 ml chicken stock
3 tsp lemon juice
2 tsp salt
2 tsp ground cardamom
1/2 tsp ground ginger
1 1/2 tsp ground turmeric
75 g roasted peanuts, finely ground

Method

  1. Heat the oil in a saucepan. Fry trhe onions and garlic for 3 min or until softened. Place with all the marinade ingredients in a mixing bowl. Stir thoroughly.

  2. Add the chicken, making sure each piece is well coated. Leave to marinate in the fridge overnight.

  3. Preheat oven to 200°C.

  4. Remove chicken from the marinade. Thread onto small wooden skewers. Place on a baking tray. Cook for 10-12 min, turning frequently and basting with the remaining marinade.

  5. Serve hot or cold.
