Mini chicken satay
These mini satay sticks can be made in advance then cooked up on the day.
What you need
- 6 tsp groundnut oil
- 1 small onion, peeled adn finely diced
- 2 cloves garlic, peeled and finely diced
- 450 g skinless, boneless chicken breasts, cut into 2 cm cubes.
- for the marinade
- 150 g creamed coconut
- 300 ml chicken stock
- 3 tsp lemon juice
- 2 tsp salt
- 2 tsp ground cardamom
- 1/2 tsp ground ginger
- 1 1/2 tsp ground turmeric
- 75 g roasted peanuts, finely ground
Method
Heat the oil in a saucepan. Fry trhe onions and garlic for 3 min or until softened. Place with all the marinade ingredients in a mixing bowl. Stir thoroughly.
Add the chicken, making sure each piece is well coated. Leave to marinate in the fridge overnight.
Preheat oven to 200°C.
Remove chicken from the marinade. Thread onto small wooden skewers. Place on a baking tray. Cook for 10-12 min, turning frequently and basting with the remaining marinade.
Serve hot or cold.
