Hot beef and bean thread noodles
A one pot meal - great for a Friday night!
What you need
- 3 tsp groundnut oil
- 5 salad onions, trimmed and sliced diagonally
- 3 cloves garlic, peeled and finely chopped
- 450 g lean minced beef
- 450 ml chicken stock
- 4 1/2 tsp chilli bean sauce
- 3 tsp yellow bean sauce
- 3-5 dried crushed chillies
- 6 tsp light soy sauce
- 100 g bean thread noodles, soaked in warm water for 15 min
- 3/4 tsp sesame oil
Method
Heat the oil in a wok or large frying pan. Add the salad onions and garlic. Stir fry for a few seconds.
Add the beef. Stir fry for 5-8 min until cooked.
Add remaining ingredients except noodles and sesame oil. Cook for 5 min.
Drain noodles from the soaking water. Cut into 7 1/2 cm lengths. Add to the pan with sesame oil. Cook for 5 min. Serve.
