Kulfi malai (Mango ice cream)

A smooth Indian ice cream that makes a refreshing and wickedly rich end to any dinner party.

What you need

350 g condensed milk
300 ml double cream
100 g caster sugar
freshly squeezed juice of 1 lime
15 g shelled, skinless pistachio nuts, finely chopped
350 g peeled and stoned mangos, sliced
1 tsp vanilla essence
to decorate
1 tsp chopped pistachio nut

Method

  1. Place the milk and cream in a pan with the sugar. Bring to the boil. Leave to simmer over a low heat for 30 min, stirring occasionally.

  2. Stir in the lime juice and pistachio nuts. Leave to cool completely.

  3. Meanwhile, place the mango ina food processor or blender. Process until smooth.

  4. Stir the mango puree into the cream mixture with the vanilla essence. Spoon the ice cream mixture into a freezerproof container. Cover. Freeze until firm.

  5. Serve the ice cream in scoops, straight from the freezer. Decorate with pistachio nuts.
