Stir fried beef with noodles

Once all the ingredients are assembled, this all-in-one meal takes just a few minutes to cook.

What you need

225 g broccoli florets
350 g rump steaks
6 tsp dry sherry
6 tsp soy sauce
2 tsp cornflour
225 g egg noodles
60 ml sunflower oil
1 clove garlic, peeled and crushed
1 tsp root ginger, peeled and grated
1 onion, peeled and thinly sliced
100 g mushrooms, thinly sliced
300 ml boiling water
100 g bean sprouts
2 salad onions, trimmed and sliced diagonally

Method

  1. Break up the broccoli florets into small pieces. Slice the stalks thinly on the diagonal.

  2. Slice the beef as thinly as possible, across the grain. Place in a bowl with the sherry, soy sauce and cornflour. Stir well to coat evenly.

  3. Bring a large pan of salted water to the boil. Add the noodles. Remove from heat. Leave for 6 min. Drain well. Toss in a little oil.

  4. Meanwhile: Heat half the oil in a large frying pan or wok. Add the garlic and ginger. Fry for 1 min.

  5. Add the onion. Fry for 1 min.

  6. Add the broccoli and mushrooms. Fry for 1 min. Remove all the vegetables from the pan with a slotted spoon. Transfer to a plate.

  7. Add the remaining oil to the pan. When hot, add the meat. Stir fry quickly for about 2 min until browned. Add the boiling water. Bring to the boil, stirring. Return the vegetables to the pan. Stir well. Cook for 1 min.

  8. Add the bean sprouts and noodles. Bring to the boil. Cover. Cook for 2 min. Serve immediately sprinkled with the salad onions.
