Basic piped cookie mixture

This basic cookie mixture is extremely versatile. You can decorate the cookies in as many ways as you can think of.

What you need

125 g butter
50 g icing sugar
175 g plain flour
75 g cornflour
seasoning
1 tsp vanilla essence
2 tsp milk

Method

  1. Preheat oven to 190°C.

  2. Beat the butter until softened. Sieve together the icing sugar, flour and cornflour. Add to the butter with the salt, essence and milk. Mix until well incorporated and a smooth dough is formed.

  3. Spoon the mixture into a piping bag, fitted with a large star nozzle. Pipe small shapes, spaced well apart, onto ungreased baking trays. Decorate - for example, with cherry halves and angelica.

  4. Bake in the oven for 12-14 min until firm and golden. Allow to cool slightly. Then transfer to a wire rack with a palette knife to become crisp and cool completely.

Serving suggestion

Decorate the plain biscuits by dipping some in melted plain chocolate and others in melted white chocolate. Sprinkle with hundreds and thousands.

Cook's tip

The cookie mixture can also be rolled out on a slightly floured surface and cut into shapes using a selection of cutters.
