Tomato lamb noisettes with rosemary

A quick dish to make after a busy day.

What you need

4 ripe tomatoes, quartered
1 clove-2 cloves garlic, peeled
2 sprigs fresh rosemary
2 sprigs fresh parsley
6 tsp olive oil
45 ml white wine
8 lean lamb noisettes, 2 1/2 cm thick
seasoning

Method

  1. Place tomatoes, garlic, rosemary and parsley in a food processor. Process for 1-2 min.

  2. Heat the oil in a frying pan. Put 2-3 tablespoons of the tomato mixture into the pan. Stir over a gentle heat for 1-2 min.

  3. Add the lamb and cook on both sides for 4-5 min. Remove lamb and keep warm.

  4. Spoon the remaining mixture into the frying pan. Cook for 2-3 min. Pour in the wine. Stir and cook for 1 min.

  5. Spoon tomato mixture over lamb and serve.
