Tomato lamb noisettes with rosemary
A quick dish to make after a busy day.
What you need
- 4 ripe tomatoes, quartered
- 1 clove-2 cloves garlic, peeled
- 2 sprigs fresh rosemary
- 2 sprigs fresh parsley
- 6 tsp olive oil
- 45 ml white wine
- 8 lean lamb noisettes, 2 1/2 cm thick
- seasoning
Method
Place tomatoes, garlic, rosemary and parsley in a food processor. Process for 1-2 min.
Heat the oil in a frying pan. Put 2-3 tablespoons of the tomato mixture into the pan. Stir over a gentle heat for 1-2 min.
Add the lamb and cook on both sides for 4-5 min. Remove lamb and keep warm.
Spoon the remaining mixture into the frying pan. Cook for 2-3 min. Pour in the wine. Stir and cook for 1 min.
Spoon tomato mixture over lamb and serve.
Serving suggestion
Saute potatoes and fine green beans.
