Quick cassoulet

A speedy version of the bean and sausage stew renowned in the South of France.

What you need

3 tsp olive oil
1 onion, peeled and sliced
2 baby leeks, trimmed and sliced
1 stick celery, trimmed and sliced
2 tsp plain flour
200 ml chicken stock
400 g canned chopped tomatoes
425 g canned haricot beans, drained
225 g smoked pork sausages with garlic, sliced diagonally
3 tsp tomato puree
1 tsp chopped fresh thyme
seasoning
75 g fresh white breadcrumbs

Method

  1. Preheat oven to 190°C.

  2. Heat the oil in a flameproof casserole. Fry the onion, leeks and celery for 5 min or until softened. Sprinkle over the flour. Cook for 1 min. Gradually add the stock.

  3. Stir in the chopped tomatoes, beans, sliced sausage, tomato puree, thyme and seasoning. Bring to the boil, simmer for 1 min. Remove from the heat. Sprinkle over the breadcrumbs.

  4. Cook in the oven for 10-12 min until breadcrumbs are golden brown and crisp.
