Apple and celery soup

This lovely soup can be served hot or chilled.

What you need

1 large onion, peeled and finely chopped
1 head green celery, trimmed and chopped
450 ml chicken stock
450 g eating apples
freshly squeezed juice of 1 lemon
50 g butter, softened
75 g instant mashed potato granules
450 ml milk
1 pinch celery salt
freshly ground black pepper

Method

  1. Place the onion, celery and stock in a saucepan. Bring to the boil, cover and simmer for 15 min.

  2. Peel, core and slice the apples. Toss in the lemon juice to help prevent discoloration. Add to the pan. Cook for 10 min, until tender.

  3. Stir in the butter until melted. Add the instant potato. Add the milk. Cook over a low heat for 5 min, stirring frequently until thickened slightly.

  4. Add celery salt and pepper to taste. Liquidise the soup. Serve.
