Green bean and tomato soup

A deliciously creamy soup that makes an interesting change to tomato soup.

What you need

225 g runner beans, string removed and thinly sliced
1 large onion, peeled and chopped
350 g tomatoes, skinned, de-seeded and finely chopped
450 ml chicken stock
1 tsp chopped fresh thyme
3 tsp tomato puree
seasoning
50 g butter, diced
50 g plain flour
450 ml milk

Method

  1. Place vegetables in a saucepan with the stock, thyme, tomato puree and seasoning. Bring to the boil then simmer for 25-30 min until beans are tender.

  2. Meanwhile, melt the butter in a saucepan. Stir in the flour. Cook for 1 min. Gradually stir in the milk, bringing to the boil, stirring constantly. Simmer for 2-3 min until thickened.

  3. Slowly stir the vegetable mixture into the hot milk sauce. Heat through gently for 2-3 min until piping hot, taking care not to boil or it may curdle.
