Green bean and tomato soup
A deliciously creamy soup that makes an interesting change to tomato soup.
What you need
- 225 g runner beans, string removed and thinly sliced
- 1 large onion, peeled and chopped
- 350 g tomatoes, skinned, de-seeded and finely chopped
- 450 ml chicken stock
- 1 tsp chopped fresh thyme
- 3 tsp tomato puree
- seasoning
- 50 g butter, diced
- 50 g plain flour
- 450 ml milk
Method
Place vegetables in a saucepan with the stock, thyme, tomato puree and seasoning. Bring to the boil then simmer for 25-30 min until beans are tender.
Meanwhile, melt the butter in a saucepan. Stir in the flour. Cook for 1 min. Gradually stir in the milk, bringing to the boil, stirring constantly. Simmer for 2-3 min until thickened.
Slowly stir the vegetable mixture into the hot milk sauce. Heat through gently for 2-3 min until piping hot, taking care not to boil or it may curdle.
Serving suggestion
Garnish with sprigs of fresh thyme.
