Alebele (Sweet spiced pancakes)

A typically Goanese dish made from pancakes, filled with a sweet coconut mixture. They're rolled up and served chilled from the fridge.

What you need

for the batter
100 g plain flour
1 pinch salt
1 egg, beaten
300 ml milk
for the filling
60 ml black treacle
3 tsp water
50 g caster sugar
175 g desiccated coconut
2 tsp ground ginger
6 tsp-60 ml ghee
to decorate
2 tsp sifted icing sugar, for sprinkling

Method

  1. Sift the flour into a bowl with the salt. Make a well in the centre. Beat together the egg and milk. Pour into the well, beating until all is incorporated and smooth. Leave to stand for 30 min.

  2. Warm the treacle and water in a saucepan. Stir in the sugar, coconut and ginger. Set aside.

  3. Melt enough ghee or butter to cover the bottom of a small non-stick frying or omelette pan. Spoon in enough batter to just cover the base, tipping out any excess.

  4. Cook for 1-2 min until set and golden on the underneath. Flip over and cook for 1-2 min until golden on the other side. Repeat with remaining batter. Stack the pancakes on top of each other in between sheets of greaseproof paper.

  5. Divide filling mixture between pancakes. Roll up like a Swiss roll. Chill well.

  6. Sprinkle with icing sugar before serving.
