Pista kulfi (Pistachio nut ice cream)

A very special ice cream, traditionally served at wedding banquets in India. An ideal dessert when entertaining but preferably after a light main course as it is very rich!

What you need

450 ml double cream
350 g condensed milk
2 eggs, separated
3-4 drops almond essence
3-4 drops green food colouring
175 g chopped pistachio nuts
to decorate
grated rind of 1 lime

Method

  1. Place the cream and condensed milk in a pan. Heat very gently for 5 min. Remove from heat. Leave to cool slighly.

  2. Beat together the cream, condensed milk and egg yolks. Strain into a pan with a little almond essence and green colouring. Heat VERY GENTLY for 3-5 min until thickened, stirring constantly.

  3. Stir the nuts into the pan. Remove from heat. Pour into a shallow freezerproof container. Cool. Then freeze until mushy or half-frozen.

  4. Then whisk the egg whites in a clean bowl until stiff but not dry. Remove ice cream from freezer and fold in the egg whites. Return to the freezer. Freeze until firm.

  5. To serve: Remove from freezer 10-15 min before needed. Scoop into dishes and decorate with lime rind.
