Maple pecan pie

This old favourite tastes even better with the richness of maple syrup.

What you need

200 g ready made shortcrust pastry
3 eggs, beaten
3 tsp milk
6 tsp demerara sugar
150 ml maple syrup
50 g butter
1/2 tsp vanilla essence
175 g chopped pecans

Method

  1. Roll out the pastry on a lightly floured surface. Use to line a 23 cm (7in) flan ring or dish, trimming off any excess. Prick the base with a fork. Chill for 30 min.

  2. Preheat oven to 220°C.

  3. Beat the eggs and milk together. Bring the sugar and maple syrup to the boil and simmer for 3 min. Slowly pour onto the beaten eggs. Add the butter or margarine and vanilla essence. Beat together.

  4. Sprinkle the flan case with the chopped nuts. Cover with the syrup mixture.

  5. Bake in the oven for 10 min. Reduce temperature to 170°C and cook for about 35 min until filling is set. Serve hot or cold in slices.
