Tuscany mussels
A classic favourite is quick and economical to make. Mussels are cooked with wine, parsley, garlic and tomatoes. Serve with fresh bread.
What you need
- 2 1/2 l mussels in shells
- 2 onions, peeled and finely chopped
- 150 ml dry white wine
- 150 ml water
- 20-30 g fresh parsley, roughly chopped
- 6 tsp olive oil
- 2 cloves garlic, peeled and crushed
- 400 g canned chopped tomatoes

- 3 tsp chopped fresh parsley
Method
Scrub the mussels in several lots of cold water. Discard any that do not close when tapped sharply. Remove any beards.
Put into a large saucepan with half the onion, the wine, water and the bunch of parsley. Cover. Cook steadily for 5 min until shells open. Strain the mussels, saving the liquid. Discard any mussels that do not open.
Heat the oil in a saucepan. Add the remaining onion and garlic. Cook gently for 5 min, stirring occasionally. Add the tomatoes and juice from the can. Add the reserved mussel liquid. Simmer for 10 min.
Season to taste. Add the mussels. Heat through for 2-3 min only. Do not cook for longer as this would toughen the fish. To serve, sprinkle over the chopped parsley
Serving suggestion
Hot crusty bread.
