Basic pancake
Make more than you need and freeze the rest.
What you need
- 300 ml milk
- 2 eggs
- 100 g flour
- 1 pinch salt
- 3 tsp fresh oregano, chopped
- 2-4 tsp sunflower oil for frying
Method
Beat milk and eggs together. Sift flour and salt into a large bowl and make a well in the centre. Gradually beat in milk mixture to make a smooth batter. Stir in the oregano.
Heat a little oil in a frying pan. Pour in enough batter to thinly cover base of pan. Cook for a 2-3 min until batter is set, then turn over or flip and cook second side until golden.
Stack cooked pancakes on a plate and interleave with greaseproof paper then cover with foil to keep warm.

You could use fresh basil instead of oregano.
