Basic pancake

Make more than you need and freeze the rest.

What you need

300 ml milk
2 eggs
100 g flour
1 pinch salt
3 tsp fresh oregano, chopped
2-4 tsp sunflower oil for frying

Method

  1. Beat milk and eggs together. Sift flour and salt into a large bowl and make a well in the centre. Gradually beat in milk mixture to make a smooth batter. Stir in the oregano.

  2. Heat a little oil in a frying pan. Pour in enough batter to thinly cover base of pan. Cook for a 2-3 min until batter is set, then turn over or flip and cook second side until golden.

  3. Stack cooked pancakes on a plate and interleave with greaseproof paper then cover with foil to keep warm.
