Cabbage foogath (spiced cabbage)
An Indian dish. A foogath is the name given to a dish making use of pre-cooked vegetables.
What you need
- 50 g ghee
- 1 large onion, peeled, halved and sliced
- 2 cloves garlic, peeled and sliced
- 1 green chilli, cored, de-seeded and sliced
- 450 g cooked shredded cabbages
- 2 tsp garam masala
- 1 tsp ground cumin
- 1 tsp salt
Method
Melt the ghee or butter in a pan. Add the onion, garlic and chilli. Cook for 8-10 min until golden brown.
Stir the cabbage into the pan with the garam masala, cumin and salt. Cook over a gentle heat for 5 min, until piping hot.
Serving suggestion
Garnish with flaked toasted coconut.
Cook's tip
Use any leftover cooked vegetable instead of the cabbage, keeping quantities the same.
