Chicken stuffed papaya

A Caribbean recipe that can be used as a starter or main course.

What you need

1 onion, peeled and chopped
2 cloves garlic, peeled and crushed
6 tsp vegetable oil
100 g carrots, peeled, chopped and blanched
225 g cooked chicken, chopped
2 tomatoes, skinned, de-seeded and chopped
1/2-1 tsp hot pepper sauce
6 tsp chopped fresh mixed herbs
seasoning
2 green papaya
50 g grated cheese

Method

  1. Preheat oven to 190°C.

  2. Using half the oil, fry the onion and garlic until translucent. Add the carrots, chicken, tomatoes, sauce, herbs (reserving some for garnish) and seasoning. Cook gently for 2-3 min.

  3. Cut the papaya in half. Remove the seeds. Trim the base so they stand evenly. Place on baking trays. Brush the flesh with the remaining oil. Fill the halves with the chicken mixture.

  4. Cover with foil. Cook in the oven for 50-60 min until papaya flesh is tender. About 10 min before the end of cooking, remove foil and sprinkle over the grated cheese.

  5. Scatter over reserved chopped herbs.
