Mixed mushrooms with noodles

A rich medley of mixed fresh mushrooms. If you can't buy all the recommended varieties make up the recipe using dried ones.

What you need

6 tsp sesame oil
25 g butter
2 cloves garlic, peeled and chopped finely
3 tsp sesame seeds
6 tsp fresh rosemary, chopped
125 g blewit mushrooms
150 g button mushrooms, wiped and sliced
125 g closed cup mushrooms, wiped and quartered
200 g horse mushrooms
125 g oyster mushrooms
6 tsp white wine or light stock
To serve
250 g egg noodles
seasoning

Method

  1. Heat oil and butter together in large saucepan. Add garlic, sesame seeds and rosemary and cook for 30 seconds. Halve any large mushrooms then add all the mushrooms to pan. Cover and cook for 3 min, stirring occasionally. Add wine and cook over gentle heat for 1 min. Season to taste.

  2. Meanwhile, cook egg noodles according to pack instructions and drain.

  3. Stir egg noodles into mushrooms. Serve immediately.
