Capri salad
A simple Italian salad using beef tomatoes, Mozzarella cheese and fresh basil.
What you need
- 2 beef tomatoes, wiped and sliced
- 300 g mozzarella cheese, drained and sliced
- 6 tsp shredded fresh basil
- the dressing
- 50 ml olive oil
- freshly squeezed juice of 1/2 lemon
- seasoning
Method
Arrange the tomatoes on a serving platter with the sliced Mozzarella.
Sprinkle over the basil.
In a jug, whisk the oil, lemon juice and seasoning to taste. Drizzle over the salad.
Serving suggestion
Garnish with more shredded fresh basil.
