Capri salad

A simple Italian salad using beef tomatoes, Mozzarella cheese and fresh basil.

What you need

2 beef tomatoes, wiped and sliced
300 g mozzarella cheese, drained and sliced
6 tsp shredded fresh basil
the dressing
50 ml olive oil
freshly squeezed juice of 1/2 lemon
seasoning

Method

  1. Arrange the tomatoes on a serving platter with the sliced Mozzarella.

  2. Sprinkle over the basil.

  3. In a jug, whisk the oil, lemon juice and seasoning to taste. Drizzle over the salad.
