Casserole of beef in red wine

This bistro meal is perfect for easy entertaining.

What you need

50 g beef dripping
675 g topside of beef, cut into 100 g steaks
1 onion, peeled and finely diced
2 cloves garlic, peeled and crushed
175 g rashers rindless back bacon, diced
450 ml red wine
450 ml good quality beef stock
1 pinch mixed herbs
4 tomatoes, blanched, peeled, de-seeded and roughly chopped
seasoning
225 g button mushrooms, wiped

Method

  1. Preheat oven to 180°C.

  2. Melt the dripping in a frying pan. Add the steaks and cook for 3-5 min on each side until well browned. Using a slotted spoon, transfer to an ovenproof casserole dish.

  3. Add the onions, garlic and bacon to the pan. Cook for 3 min until softened. Add to the casserole dish with the meat.

  4. Pour over the wine, stock, herbs and tomatoes. Season to taste.

  5. Cover and cook in the oven for 1 hour.

  6. Stir the mushrooms into the dish. Cover and cook for 20-30 min until tender. Serve.
