Spiced biscuits
Delicately spiced biscuits originating from the West Country.
What you need
- 100 g butter, softened
- 75 g caster sugar
- 1 egg, separated
- 200 g plain flour
- 1 pinch salt
- 1 tsp mixed spice
- 1/2 tsp ground cinnamon
- 25 g currants
- 25 g glace cherries, rinsed and finely chopped
- 25 g mixed peel, chopped
- 100 ml (roughly) milk to bind
- 15 g caster sugar for dredging
Method
Preheat oven to 200°C.
In a bowl, cream together the butter and sugar until pale and fluffy. Beat in the egg yolk.
Sift together the flour, salt, mixed spice and cinnamon. Fold into the creamed mixture with the currants, cherries and mixed peel with enough milk to bind to a soft and pliable dough.
Roll out on a lightly floured surface to 5mm (1/10 1/4 cm) thick. Using a 6cm (2 1/2in) round cutter, cut into rounds.
Place on a lightly greased baking tray. Brush with remaining lightly beaten egg white. Sprinkle with the sugar. Cook in the oven for 8-10 min until golden and firm. Leave to cool on a wire rack.
