Quick and easy chicken tortillas

These tortillas use leftover cooked chicken. A great midweek meal!

What you need

3 tsp olive oil
1 small onion, peeled, halved and sliced
1 clove garlic, peeled and crushed
1 tsp chilli powder
350 g skinless, boneless cooked chicken, cut into strips
1 green pepper, cored, de-seeded and chopped
400 g canned chopped tomatoes
425 g canned red kidney beans
seasoning
6 flour tortillas
50 g cheddar cheese
to serve
75 ml creme fraiche

Method

  1. Heat the oil in a frying pan. Fry the onion, garlic and chilli for 3 min until softened. Add the pepper and cooked chicken. Cook for 3-5 min.

  2. Add the tomatoes, kidney beans and seasoning. Simmer together for 10-15 min until thickened slightly.

  3. Warm the tortillas according to pack instructions.

  4. Divide the filling between tortillas. Roll up to incorporate the mixture. Arrange in an ovenproof dish. Sprinkle with cheese. Grill under a preheated medium grill for 3-5 min until cheese is melted and golden.

  5. Drizzle over the creme fraiche or yogurt to serve.
