Eve's pudding

A Welsh version of the classic British dessert using apples with a spongey toppping.

What you need

675 g cooking apples, peeled, cored and thinly sliced
150 ml water
50 g caster sugar
2-3 tsp fresh lemon juice
for the topping
50 g butter
50 g plain flour
300 ml milk
3-4 drops vanilla essence
50 g caster sugar
2 eggs, separated

Method

  1. Preheat oven to 160°C.

  2. Simmer the apples in the water, sugar and lemon for 5-10 min until they start to puree. Spoon into a 1 1/8 ltr (2 pt) pie dish.

  3. Heat the butter in a pan. Add the flour and blend with the butter. Cook gently for 2 min, stirring constantly.

  4. Gradually pour the milk into the pan, stirring as the liquid comes to the boil. Cook for 1-2 min until thickened. Add a few drops of vanilla essence and the sugar.

  5. Remove the pan from the heat. Beat the egg yolks into the sauce. Whisk the egg whites and fold into the mixture. Blend with the other ingredients. Spoon over the apples.

  6. Bake in the oven for 40 min.
