Gingered chicken breast

An easy and delicious way to serve chicken - the flavours are marinaded with the chicken overnight. This recipe is good for one person too.

What you need

4 skinless boneless chicken breasts
for the marinade
150 ml olive oil
freshly squeezed juice of 1 lemon
1 bunch salad onions, trimmed and finely sliced
2 cloves garlic, peeled and crushed
2 1/2 cm root ginger, peeled and finely chopped
seasoning
3 tsp chopped fresh parsley

Method

  1. In a shallow dish, combine the marinade ingredients.

  2. Cut a few slits in the top of the chicken. Add to the marinade. Cover and chill in the fridge overnight.

  3. Preheat a medium hot grill. Transfer chicken to the grill pan. Grill for 10-15 min, basting frequently with the leftover marinade until cooked.

New potatoes and a tomato, cucumber and onion salad.

Cook's tip

The marinated chicken is also delicious if cut into strips, stir fried and served with a fresh green salad.
