Fruit coleslaw

A colourful salad for your buffet or barbecue, or to serve with burgers for a Saturday night supper.

What you need

1 small red cabbage, cored and finely shredded
1 small white cabbage, cored and finely shredded
2 carrots, peeled and coarsely grated
1 red-skinned apple, quartered, cored and chopped
1 small onion, finely sliced
50 g raisins
3 tsp chopped fresh parsley
120 ml reduced fat mayonnaise
seasoning

Method

  1. In a large bowl, toss together the prepared cabbage, carrots, apple, onion, raisins and parsley.

  2. Stir in the mayonnaise. Season to taste.

  3. Chill well before serving.
