Fruit coleslaw
A colourful salad for your buffet or barbecue, or to serve with burgers for a Saturday night supper.
What you need
- 1 small red cabbage, cored and finely shredded
- 1 small white cabbage, cored and finely shredded
- 2 carrots, peeled and coarsely grated
- 1 red-skinned apple, quartered, cored and chopped
- 1 small onion, finely sliced
- 50 g raisins
- 3 tsp chopped fresh parsley
- 120 ml reduced fat mayonnaise
- seasoning
Method
In a large bowl, toss together the prepared cabbage, carrots, apple, onion, raisins and parsley.
Stir in the mayonnaise. Season to taste.
Chill well before serving.
Serving suggestion
Serve with assorted cold meats.
