Blueberry muffins

This is an easy recipe for muffins. To make them extra special, decorate with pecans.

What you need

225 g plain flour
1 1/2 tsp bicarbonate of soda
1 pinch salt
1 tsp ground cinnamon
300 g blueberries
50 g soft dark brown sugar
50 g granulated sugar
1 egg
225 ml milk
6 tsp clear honey
50 g butter, melted

Method

  1. Preheat oven to 200°C. Grease bun tins with wells 4 cm (1 1/2in) deep.

  2. Sift together the flour, bicarbonate of soda, salt and cinnamon. Stir in the blueberries and sugar.

  3. Mix together the egg, milk, honey and melted butter.

  4. Add the liquid mixture to the dry ingredients. Stir only until the flour is moistened. DO NOT beat the batter until smooth.

  5. Spoon the batter into the greased wells. Bake in the oven for 20 min.

  6. Remove from the tin onto a cooling rack. Serve warm or at room temperature.
