Saucy Southern fried chicken

These tasty drumsticks are actually baked in the oven so are better for you.

What you need

8 chicken drumsticks, thawed well if frozen
2 eggs, beaten
for the coating
75 g dried breadcrumbs
1/2 tsp salt
6 tsp paprika
1/2 tsp garlic powder
1/2-1 tsp ground turmeric

Method

  1. Preheat oven to 200°C. Coat the chicken drumsticks in the beaten egg.

  2. Place all the coating ingredients in a clean polythene bag and toss well. Empty the breadcrumbs on a plate. Coat each drumstick with the crumbs, ensuring they are coated all over. Once all the drumsticks have a coating, repeat the process, using up all remaining ingredients.

  3. Place drumsticks on a lightly greased baking tray. Bake for 25-30 min until cooked through thoroughly.
