Aubergine, courgette and tomato salad

A beautiful-looking salad.

What you need

for the dressing
175 ml olive oil
60 ml wine vinegar
50 ml dijon mustard
2 cloves garlic, peeled and crushed
1 tsp clear honey, to taste
seasoning
for the salad
225 g courgettes, trimmed and very thinly sliced
8 baby aubergines, trimmed and quartered
6 tsp-45 ml olive oil
12 cherry tomatoes, sliced
50 g pitted black olives
3 tsp chopped fresh marjoram
3 tsp chopped fresh parsley

Method

  1. Place all the dressing ingredients in a screw-top jar. Shake well. Lay the courgette slices in a bowl. Pour the dressing over. Leave to marinate overnight.

  2. Brush the aubergine slices with the olive oil. Cook under a preheated grill until golden brown and soft to the touch. Add to the courgettes along with the rest of the ingredients. Toss thoroughly. Turn into a salad bowl.

Cook's tip

Baby courgettes work really well in this recipe. They also should be sliced very thinly, to allow the flavour of the dressing to be absorbed.
