Aubergine, courgette and tomato salad
A beautiful-looking salad.
What you need
- for the dressing
- 175 ml olive oil
- 60 ml wine vinegar
- 50 ml dijon mustard
- 2 cloves garlic, peeled and crushed
- 1 tsp clear honey, to taste
- seasoning
- for the salad
- 225 g courgettes, trimmed and very thinly sliced
- 8 baby aubergines, trimmed and quartered
- 6 tsp-45 ml olive oil
- 12 cherry tomatoes, sliced
- 50 g pitted black olives
- 3 tsp chopped fresh marjoram
- 3 tsp chopped fresh parsley
Method
Place all the dressing ingredients in a screw-top jar. Shake well. Lay the courgette slices in a bowl. Pour the dressing over. Leave to marinate overnight.
Brush the aubergine slices with the olive oil. Cook under a preheated grill until golden brown and soft to the touch. Add to the courgettes along with the rest of the ingredients. Toss thoroughly. Turn into a salad bowl.

Cook's tip
Baby courgettes work really well in this recipe. They also should be sliced very thinly, to allow the flavour of the dressing to be absorbed.
