Oatmeal raisin cookies
What you need
- 175 g unsalted butter, softened
- 175 g brown sugar
- 150 g granulated sugar
- 1 egg
- 1 tsp vanilla extract
- 100 g porridge oats
- 175 g plain flour
- 3/4 tsp baking powder
- 3/4 tsp bicarbonate of soda
- 1/4 tsp salt
- 225 g raisins
Method
Preheat oven to 190°C. Cream together the butter and sugars until light and fluffy. Beat in the egg and vanilla extract until smooth.
Mix together the oats, flour, baking powder, baking soda and salt in a mixing bowl. Stir into the butter mixture until just combined. Stir in the raisins.
Heap tablespoons of mixture onto large baking sheets (no need to grease them), leaving 5 cm (2in) between each ball of dough. Bake for 12-15 min until golden brown. When cool enough to touch, transfer to a wire rack to cool completely.
