Cheese and date salad

A main meal salad. Serve with fresh granary bread.

What you need

150 g mixed salad leaves
3 sticks celery, trimmed and sliced
2 red-skinned apples, cored and chopped
8 fresh dates, stoned and chopped
40 g chopped walnuts
125 g emmenthal cheese, sliced
75 g stilton cheese, chopped into bite-sized pieces
1 large orange
for the dressing
juice of 1 lemon
45 ml walnut oil
seasoning
3 tsp chopped fresh mixed herbs

Method

  1. Gently toss salad leaves in a large serving bowl. Stir in the prepared celery, apples, dates, walnuts and cheeses.

  2. Grate the rind from the orange before peeling. Reserve for the dressing. Peel and segment the orange with a sharp stainless steel knife, working over a bowl to catch the juices. Add the orange segments to the salad.

  3. Place the orange juice and rind and dressing ingredients in a screw-top jar. Shake well until combined. Pour over the slad. Toss and serve.
