Green bean, potato and feta medley

This dish can be served warm or cold.

What you need

450 g green beans, topped and tailed
90-105 ml olive oil
1 large onion, peeled and finely sliced
2 cloves garlic, peeled and finely sliced
2 potatoes, peeled and cut into 2 1/2 cm (1 in cubes>
400 g canned tomatoes, drained and roughly chopped
seasoning
175 g feta cheese, roughly broken into even pieces
40 g pitted black olives, drained and halved
3 tsp chopped fresh coriander

Method

  1. Slice beans in half, if they are too long. Rinse and drain.

  2. Heat the oil in a pan. Saute the onions and garlic until pale golden. Add the beans and potatoes. Saute until golden.

  3. Stir in the tomatoes. Season to taste. Cover and cook for 20-30 min until beans are tender, stirring occasionally. If the tomato sauce begins to stick to the pan, add a little water.

  4. Remove from the heat. Stir in the feta cheese, olives, coriander and more seasoning, if required. Leave to cool to room temperature before serving.
