A classic Greek recipe. Lamb is casseroled in delicious garlic, lemon and rosemary flavours until the tender meat just falls from the bone

What you need

1-1 1/2 kg lean shoulder of lamb
1 large onion, peeled and finely chopped
3 cloves garlic, peeled
75 ml lemon juice, strained
1 sprig (large) fresh rosemary
2 bay leaves
45 ml olive oil
seasoning

Method

  1. Preheat oven to 150°C.

  2. Place lamb in a casserole dish with a lid. Add the onion, garlic, lemon juice, herbs, oil, seasoning and sufficient water to come half-way up the lamb. Wrap the whole dish in foil. Bake for 2 hr 30 min or until meat parts easily from the bone.

  3. Remove casserole lid. Cook uncovered for 20-25 min until lightly browned.
