Mediterranean mixed vegetables

What you need

for the vegetables
4 sweetcorn on the cob, trimmed
1 red pepper, de-seeded and halved
1 yellow pepper, de-seeded and halved
2 red onions, peeled and quartered
4 large open cup mushrooms
1 aubergine, trimmed and halved
seasoning
to baste
75 ml olive oil
6 tsp balsamic vinegar
2 cloves garlic, peeled and crushed
3 tsp fresh parsley, finely chopped
40 g butter

Method

  1. Put the corn in boiling unsalted water. Return to the boil and simmer for 10-15 min until tender. Drain well.

  2. Mix all the basting ingredients together. Brush the vegetables liberally on both sides. Place onto a preheated barbecue or under a grill and cook for about 10 min, turning once.
