Tuna and cheese-filled tomatoes

An economical recipe to make - ideal for midday meals or as a light snack.

What you need

6 firm large tomatoes
200 g canned tuna in brine
100 g mature cheddar cheese, finely grated
2 tsp lemon juice
150 g natural yogurt
2 tsp fresh parsley, chopped
freshly ground black pepper

Method

  1. Cut tomatoes in half horizontally. Remove pips.

  2. Drain tuna. Mash in a bowl. Mix in remaining ingredients.

  3. Use tuna mixture to fill the tomato halves.
