Tuna and cheese-filled tomatoes
An economical recipe to make - ideal for midday meals or as a light snack.
What you need
- 6 firm large tomatoes
- 200 g canned tuna in brine
- 100 g mature cheddar cheese, finely grated
- 2 tsp lemon juice
- 150 g natural yogurt
- 2 tsp fresh parsley, chopped
- freshly ground black pepper
Method
Cut tomatoes in half horizontally. Remove pips.
Drain tuna. Mash in a bowl. Mix in remaining ingredients.
Use tuna mixture to fill the tomato halves.
Serving suggestion
Serve on a round of toast. Garnish with fresh herbs such as parsley or chervil.
Cook's tip
Sticks of celery can also be filled with the tuna mixture.
