Autumn puddings

Individual puddings made with mixed berries that are very simple to make.

What you need

8-10 slices bread, brown or white, medium or thick sliced.
450 g mixed berries eg elderberries, blackberries, blueberries, raspberries
175 g caster sugar
6 tsp-45 ml water

Method

  1. Cut the crusts off the bread. Use to line individual ramekin dishes or moulds, reserving 2-3 slices for the top.

  2. Place the fruit in a large pan. Add the sugar and water. Bring slowly to the boil. Cook for 2-3 min until sugar has dissolved. Remove from the heat.

  3. Using a slotted spoon, transfer the fruit to the lined pudding bowls and fill to the top.

  4. Cover the fruit with remaining bread. Place small saucers over the dishes. Place a weight on top. Leave overnight in the fridge.

  5. To serve, invert onto serving plates.
