Mushroom and pepper tartlets

Great for a picnic or tea-time snack

What you need

150 g butter, diced
250 g plain flour, sifted
1 egg yolk, lightly beaten
for the filling
75 g button mushrooms, wiped and finely sliced
1/2 red pepper, cored, de-seeded and finely sliced
1/2 green pepper, cored, de-seeded and finely sliced
1 egg, lightly beaten
75 ml double cream
seasoning

Method

  1. Preheat oven to 200°C.

  2. Rub the butter and flour together until mixture resembles fine breadcrumbs. Stir in the egg yolk and enough cold water to form a smooth, pliable but not sticky dough.

  3. Knead lightly. Roll out on a floured surface. Cut out 9 cm (3 1/2in) rounds, using a plain cutter, re-kneading and rolling as necessary.

  4. Line a greased bun tin or tartlet tins with the pastry rounds.

  5. Divide the mushrooms and peppers between the cases. Beat together the egg and cream. Season and pour into the tartlets.

  6. Bake in the oven for 20-25 min until pale golden brown. Remove from the tins. Serve warm or cold.
