Hazelnut and blackberry baked cheesecake

Only serve small slices of this luxurious and deliciously rich cheesecake.

What you need

225 g digestive biscuits, crushed
75 g butter, melted
for the filling
600 g cream cheese
3 eggs
175 g soft dark brown sugar
100 g shelled hazelnuts, very finely chopped
45 ml plain flour
to decorate
50 g blackberries, hulled, rinsed and dried; thawed if frozen

Method

  1. Mix the crushed biscuits and butter. Press into the base of a lightly greased 19 cm (7 1/2in) spring clip loose-based tin. Chill while preparing the filling.

  2. Preheat oven to 180°C.

  3. Beat together the cream cheese, eggs and sugar. Fold in the hazelnuts and flour until evenly distributed.

  4. Spoon filling onto the base. Bake for about 1 hour until filling is set.

  5. Cool in the tin. Transfer to a serving plate. Decorate with blackberries.
