Minestrone soup

A tasty main meal soup.

What you need

4 rashers rindless streaky bacon, diced
1 onion, peeled and chopped
1 clove garlic, peeled and crushed
1 carrot, peeled and diced
1 small turnip, peeled and diced
2 sticks celery, trimmed and chopped
1 leek, trimmed and sliced
1/2 tsp dried mixed herbs
200 g canned chopped tomatoes
6 tsp tomato puree
1/4 white cabbage, finely shredded
750 ml chicken stock
25 g spaghetti, broken into short lengths
seasoning
25 g parmesan cheese, grated

Method

  1. Fry the bacon in a pan until the fat runs out. Add the onion and garlic and fry in the bacon fat until lightly browned.

  2. Add the carrot, turnip, celery, leek and mixed herbs. Cook for 5 min.

  3. Add the tomatoes, tomato puree, cabbage and stock. Bring to the boil, cover and simmer gently for 1 hour. (You can cook for longer if wished.)

  4. Add the spaghetti and cook for 10-12 min, until pasta is cooked.

  5. Season to taste.

  6. Serve sprinkled with Parmesan cheese.
