Mixed iceberg salad with creamy basil dressing

This light and crunchy salad is beautifully dressed with a thick and creamy herb dressing.

What you need

1/2 iceberg lettuce, roughly broken into pieces
1 small red onion, peeled and sliced
1/2 cucumber, finely diced
100 g cherry tomatoes, wiped and halved
For the dressing
60 ml mayonnaise
6 tsp fromage frais
3 tsp red wine vinegar
75 ml water
freshly squeezed juice of 1 lime
1 pinch caster sugar
seasoning
3 tsp shredded fresh basil

Method

  1. Rinse the lettuce under a cold tap. Drain thoroughly. Arrange in a salad bowl with the onion, cucumber and tomatoes.

  2. Combine remaining ingredients together in a screw-top jar. Shake thoroughly until well mixed. Pour over the salad just before serving.
