Mixed iceberg salad with creamy basil dressing
This light and crunchy salad is beautifully dressed with a thick and creamy herb dressing.
What you need
- 1/2 iceberg lettuce, roughly broken into pieces
- 1 small red onion, peeled and sliced
- 1/2 cucumber, finely diced
- 100 g cherry tomatoes, wiped and halved
- For the dressing
- 60 ml mayonnaise
- 6 tsp fromage frais
- 3 tsp red wine vinegar
- 75 ml water
- freshly squeezed juice of 1 lime
- 1 pinch caster sugar
- seasoning
- 3 tsp shredded fresh basil
Method
Rinse the lettuce under a cold tap. Drain thoroughly. Arrange in a salad bowl with the onion, cucumber and tomatoes.
Combine remaining ingredients together in a screw-top jar. Shake thoroughly until well mixed. Pour over the salad just before serving.
