Cacik (Turkish cucumber and yogurt salad)

A refreshing salad that's good with grilled or barbecued lamb.

What you need

1 large cucumber, diced
1-2 tsp sea salt, finely ground
4-5 cloves garlic, peeled
1/2 litre yogurt
black pepper
3 tsp dried mint
60 ml chopped fresh mint

Method

  1. Put the diced cucumber into a colander. Sprinkle with the sea salt. Leave to drain for at least an hour.

  2. Press the cucumber with your hands to extract as much liquid as possible. Dry with kitchen paper.

  3. Crush the garlic with a large bladed knife, adding a little salt to make it creamy. Add to the yogurt.

  4. Add the pepper and nearly all the mint to the yogurt.

  5. Half an hour before serving, stir in the cucumber. Chill well.

  6. Sprinkle with remaining mint before serving.
