Orange curd - microwave

For lemon curd, replace the oranges with four large lemons.

What you need

3 medium oranges
175 g butter, cut into pieces
4 large eggs, hard-boiled and shelled
2 large egg yolks, lightly beaten
275 g caster sugar

Method

  1. Carefully grate the rind from the oranges and reserve it. Heat the oranges for 1 min in the microwave on 100% (FULL) power. Squeeze out the juice.

  2. Melt the butter for 2-3 min in a covered bowl. Mix the reserved orange rind and juice together with the eggs, and beat into the melted butter.

  3. Cook, uncovered, on 100% (FULL) power for 6-7 min, stirring every minute, until the mixture coats the back of a wooden spoon.

  4. Pour the mixture into warm jars, seal and label. Keep chilled and use within one month.
