Chicken breasts baked on a bed of wild mushrooms

Chicken breasts are simply baked on a delicious bed of mushrooms, shallots, Port and cream.

What you need

chopped
25 g dried wild mushrooms, eg cepes, morels
225 g mushrooms, wiped and sliced thinly
60 ml butter
50 g shallots, chopped
seasoning
60 ml port
60 ml double cream
3 skinless boneless large chicken breasts, halved

Method

  1. Drain the wild mushrooms, reserving the liquid, and chop finely.

  2. Melt the butter in a frying pan. Add the shallots and cook gently for 5 min without browning.

  3. Add all the mushrooms with seasoning and cook over a medium heat for 10 min, stirring occasionally.

  4. Preheat oven to 170°C.

  5. Add reserved mushroom liquid, Port and cream to the pan. Simmer for 5 min, until slightly thickened.

  6. Spoon mushroom mixture into a shallow baking dish. Arrange chicken halves in a single layer on the bed of mushrooms. Season to taste. Cover with foil.

  7. Bake for 30 min, until chicken is cooked.

  8. Sprinkle with fresh parsley to serve.
