Chicken breasts baked on a bed of wild mushrooms
Chicken breasts are simply baked on a delicious bed of mushrooms, shallots, Port and cream.
What you need
- chopped
- 25 g dried wild mushrooms, eg cepes, morels
- 225 g mushrooms, wiped and sliced thinly
- 60 ml butter
- 50 g shallots, chopped
- seasoning
- 60 ml port
- 60 ml double cream
- 3 skinless boneless large chicken breasts, halved
Method
Drain the wild mushrooms, reserving the liquid, and chop finely.
Melt the butter in a frying pan. Add the shallots and cook gently for 5 min without browning.
Add all the mushrooms with seasoning and cook over a medium heat for 10 min, stirring occasionally.
Preheat oven to 170°C.
Add reserved mushroom liquid, Port and cream to the pan. Simmer for 5 min, until slightly thickened.
Spoon mushroom mixture into a shallow baking dish. Arrange chicken halves in a single layer on the bed of mushrooms. Season to taste. Cover with foil.
Bake for 30 min, until chicken is cooked.
Sprinkle with fresh parsley to serve.
Serving suggestion
Seasonal vegetables.
