Lehsun baigan - dry aubergine with garlic

An Indian side dish.

What you need

45 ml oil
2 potatoes, peeled and diced
4-5 cloves garlic, peeled and lightly crushed
450 g aubergines, cubed
1/2 tsp chilli powder
1/2 tsp ground turmeric
1 tsp ground coriander
1 pinch salt

Method

  1. Heat the oil in a pan. Fry the potatoes for 5-6 min. Add the garlic and fry until garlic is browned.

  2. Add the aubergine. Stir in the spices and salt. Mix well. Add a little water, cover and cook gently for 8-10 min until potato is tender.

  3. If wished, remove garlic before serving.
