Lehsun baigan - dry aubergine with garlic
An Indian side dish.
What you need
- 45 ml oil
- 2 potatoes, peeled and diced
- 4-5 cloves garlic, peeled and lightly crushed
- 450 g aubergines, cubed
- 1/2 tsp chilli powder
- 1/2 tsp ground turmeric
- 1 tsp ground coriander
- 1 pinch salt
Method
Heat the oil in a pan. Fry the potatoes for 5-6 min. Add the garlic and fry until garlic is browned.
Add the aubergine. Stir in the spices and salt. Mix well. Add a little water, cover and cook gently for 8-10 min until potato is tender.
If wished, remove garlic before serving.
