Zucchini in agrodolce (sweet-sour courgettes)

A delicious way of serving courgettes.

What you need

1 kg courgettes, trimmed and sliced
6 tsp-45 ml olive oil
freshly ground black pepper
1 pinch ground cinnamon
60 ml white wine vinegar
6 tsp sugar

Method

  1. Salt the courgettes and leave in a colander for 1 hour.

  2. Dry the courgettes with kitchen paper.

  3. Put the olive oil in a frying pan. Cook the courgette slices gently. When nearly tender, season generously with black pepper. Sprinkle on the cinnamon, vinegar and sugar. Turn over in the juices, until juice has evaporated into a small quantity of sauce and courgette slices are slightly brown. Make sure the courgettes are tender but not overcooked.
