Classic mushroom soup

You can use the large flat mushrooms or round cultivated mushrooms in this easy recipe. And you could use shallot instead of onion and any light stock is fine.

What you need

500 g mushrooms, wiped and chopped
1/2 lemon
50 g butter
1/4 onion, peeled and chopped
1 clove garlic, peeled and chopped
3 tsp flour
500 ml vegetable stock, water or chicken stock
1 pinch grated nutmeg (optional)
seasoning
150 ml cream

Method

  1. Squeeze half a lemon over the chopped mushrooms.

  2. Melt the butter in a saucepan. Add the chopped onion and garlic and cook until soft and translucent.

  3. Add the mushrooms and stir in the flour. Stir for a couple of minutes.

  4. Gradually pour in the stock or water. Add a pinch of nutmeg if you wish.

  5. Cook for 25 min.

  6. Blend until smooth. Correct seasoning. Add a little more water if desired. Stir in the cream and serve.
